Wild Greens Frittata

 

1c wild greens

(wild onion, garlic, chives, chickweed, curly dock, dandelion, garlic mustard, etc)

4 eggs

¼ c vegetable broth or milk

¼ tsp Thyme

Butter or oil for pan

Pinch salt & pepper

 

Sautee greens for 5-10 minutes until tender, set aside.

Beat eggs, liquid, salt, pepper, and Thyme until blended.

Add greens and mix well.

Heat butter/oil in skillet over medium heat.

Add egg mixture, cook until eggs are set approx. 8-10 minutes. Remove from heat, cover, and let rest 5 minutes. Cut and serve.
