Savory Roasted Roots

I am historically bad with measurements. As in, I rarely use them. Especially with this type of recipe, so use what you have along with your own judgment on quantity and it will turn out great!

 

 

Approx. 4-5 cups total

Burdock root

Yellow Dock root

Turnip

Parsnip

Red potato

Carrots

*Apple (optional)

Sage

Thyme

Salt & pepper

½ c Olive oil

Preheat oven to 375 degrees. Dice all root veg into bite size cubes. In small bowl add Olive oil, salt, pepper, Sage, Thyme, and whatever other herbs strike your fancy, mix well. Pour oil and herb mixture over root veg. and mix well to coat. Grease a baking sheet with olive oil. Spread veg. evenly onto baking sheet. Bake 50-60 minutes. Stir around at the 30-minute mark.

  • Peel, core, dice 1-2 apples. Mix in with the vegetables at the 30 min stir mark.
